Garden Egg Drop Soup

A few weeks ago our friends Travis and Janel came over for supper. Travis wasn’t eating meat for the week and I had some chunk of meat in the crock pot so he brought his own meal. It was so good that the next day I went and got the missing ingredients and made it twice that week. This is a light soup and with the cooked egg adds some great protein.

Ingredients:

4 teaspoons of olive oil

4 large eggs, beaten

salt and pepper

2 green onions, chopped

2 tablespoons of chopped garlic

8 cups of chicken broth

1-2 teaspoons of ginger

3 handfuls of spinach

1-2 cups of sliced yellow, orange and red peppers

Directions:

1. Heat 2 tsps of olive oil over medium heat and add beaten eggs.Cook it like an omelet- flipping it and pulling it away from edges. Once cooked, put on plates and cut in desired stripes (I like 1/4 ” thick and 1″ long)

Happy Tuesday! Speaking of gardens and praying for spring…When do you start planting your seeds? Do you start them indoors? Do you buy plants? I am starting to figure out what we will plant and soon we start them inside. Please leave your garden comments and what you plan on planting.
