Garden Egg Drop Soup

A few weeks ago our friends Travis and Janel came over for supper. Travis wasn’t eating meat for the week and I had some chunk of meat in the crock pot so he brought his own meal. It was so good that the next day I went and got the missing ingredients and made it twice that week. This is a light soup and with the cooked egg adds some great protein.



4 teaspoons of olive oil

4 large eggs, beaten

salt and pepper

2 green onions, chopped

2 tablespoons of chopped garlic

8 cups of chicken broth

1-2 teaspoons of ginger

3 handfuls of spinach

1-2 cups of sliced yellow, orange and red peppers


1. Heat 2 tsps of olive oil over medium heat and add beaten eggs.Cook it like an omelet- flipping it and pulling it away from edges. Once cooked, put on plates and cut in desired stripes (I like 1/4 ” thick and 1″ long)


2.  Heat 2 tsps olive oil in a pot over medium heat. Add green onion, peppers and garlic and cook for a few minutes. Add the broth, salt and pepper and ginger. Bring to a boil.  Add the spinach and cook until wilted. Stir in egg strips and serve.


3. Enjoy


My kids and husband enjoyed it too…the ginger and peppers have such a great flavor!
